1 butternut squash (medium sized)
2 tbsps olive oil
2 tbsps unsalted butter (melted)
1 tbsp honey
1 orange zest (and then halved)
1 sprig fresh thyme
1/8 toasted pine nuts (a cup of)
1 handful dried cranberries
Peel the parsnips with a vegetable peeler, cut them in half and cut diagonally (they should sort of resemble french fries). Peel the butternut squash with a big, sharp knife and cut into cube sized pieces. Put the parsnips and squash in one bowl.
